Wine Details

Vineyards: The 16.7-acre Stoney Vine Vineyard was planted in 2007 in the Rocks District. First made famous in the late 1990s by Christophe Baron of Cayuse, the area has become one of the most fascinating viticultural areas of the New World. With fewer than 350 total acres planted on this extraordinary geological feature, the fruit is scarce and highly valued. Farming is intense and the conditions difficult, making this one of the most unique areas for viticulture in the world today.

Wine Details

Vineyards: What makes Lefore Vineyard special is that it is one of the oldest vineyards in the Rocks District. Planted in the mid-1990s, the vineyard sits on the eastern edge of the AVA and is protected from frost by being a bit higher in elevation than most of the Rocks District. It also seems to be a bit rockier on this side as well.

Olivar de la Luna Olive Oil
The story of the Olivar de la Luna farm dates back to the 18th century when King Carlos III offered land in return for clearing the Sierra of the gangs of bandits that had plagued the kingdom for years. Today, the 300 year-old trees populating this land produce the Nevadillo Blanco olive, which can only be found in the Sierra de Cordoba.

Saffron
This saffron comes from a family that has cultivated and produced the spice for 350 years. Today it is still 100% family owned and managed. The La Mancha region of Spain is famous for its high quality saffron that is used to give flavor, aroma and color to paella.

Paella Rice
Grown in the rich soils of the protected L’Albufera Park of Valencia, this short-grain rice makes the perfect ingredient for paella. Its high absorption rate allows it to soak up and hold the abundance of flavors. To ensure freshness and the highest quality final product, our Matiz rices are packed in a sturdy cloth sack that allows the rice to breathe.

Paella Pan
This size pan makes enough paella for a dinner for 4 people. It is the traditional steel paella pan used by Spaniards for centuries. The pan bottom is dimpled in order to spread heat evenly. You can use this paella pan either in the oven, on top of the stove, or on an outdoor grill. As you use your steel paella pan it will become seasoned: changing color and absorbing more flavors as you continue to cook with it. The pan is made by a family in Valencia with over 50 years of experience in producing the finest cookware for paella.
